Bikini

Yields 10 people

Ingredients for the Citrus Syrup (yields 750ml)

300ml newly squeezed clementine juice
200ml recently pressed lemon juice
500g granulated sugar

Ingredients for the Drink (yields 850ml, enough for 10)

400ml decent vodka
100ml London dry gin
150ml peach-flavored liqueur
200ml citrus syrup (see above)
A few cranberries, as a garnish
Mandarin essential oil, as a final touch

Directions

To prepare the Cordial: Put all the components into a saucepan, heat until it reaches a gentle boil, mixing until the sugar dissolves. Then, remove from the burner and let it to cool entirely. Decant to a sterilised bottle, cap it and refrigerate it chilled, where it will keep for up to one month.

Preparing the Batch Mix: Combine all the liquids into one big jug, leave to sit for an hour, then filter it best through a fine cloth, so it's completely strained.

When ready to serve: Add 85ml from the premix to a stirring glass packed with ice, and stir lightly for about 60 seconds until cold. Pour into a cold coupe glass or equivalent, decorate with some cranberries and complete it using a light spray of mandarin oil over the drink.
